The lines are made of stainless steel and the parts in contact food products are made of special materials to ensure long-lasting product conservation.
The lines are designed to operate continuously and engineered to be easily disassembled for access to clean them thoroughly and for constant maintenance.
We provide lines for the different types of pasta, including stuffed pasta.
The most common raw materials are wheat semolina and flour, yet we can processany type of flour studying customized solutions for our clients.
The production process can vary according to the type of pasta to be produced. Generally the standard production process is done in the following phases : dough production, passage on a pasteurizer, product cooling and final stage of packaging.
The whole process is automated and his subject to constant temperature and humidity control.

The production process of fresh pasta starts from mixing machines that dose and mix the ingredients (water, semolina, flour and eggs).
Then the dough is extruded through formers or sheetersto shape the product.

Pasteurizers to extend product shelf life
The product is transported by belts through a steam pasteurizing stage.. The machine, which is required by law, can considerably increase pasta shelf life, thanks to the elimination of micro-organisms and pathogenic forms.
The conveyor belt has adjustable speed. The steam is introduced by stainless steel nozzles.
The structure is insulated to reduce emissions and to enhance its energy-efficiency. The upper part is equipped with a mechanical lifting system to allow constant cleaning and maintenance.

Product stabilization with high-efficiency Cooler
The product is stabilized through thermal abatement. A system of belts convey the products through the different tiers of the chiller.
Powerful fans actioned by motors under inverters convey the air through the cooling batteries.
Once the product is stabilized, the product is ready for the packaging phase.

Final packaging
The stabilized product is conveyed by affixed belts to the weigher, where accurate scales weigh it, pasta is then packaged according to the client’s preference.
Special innovative jaws have been designed to reduce film waste and improve the seal of the packages.
The whole process is managed through PLC and Control Panels to enable the user maximum control of our systems.
The parts in contact with food products are easy to disassemble for washing and sanitizing.
